Amaretto Peach Custard Recipe

Serves: 12

Ingredients:
2 pie crusts
4 1/2 cups fresh pealed and sliced peaches (about 5)*
3 eggs
1/3 cup half-and-half
3/4 cup sugar
1/4 cup flour
1/4-1/2 tsp cinnamon
1/4 tsp ginger
2 tbsp Stonewall Peach Amaretto Jam


Directions:
Preheat oven to 450 degrees. Beat the eggs, 1/2 and 1/2, and amaretto. In a separate bowl, mix the sugar, flour and spices. Combine liquid and dry ingredients. Mix well. Add the peaches and stir. Pour into the pie crust and bake for 10 minutes. Turn oven down to 375º and bake for another 45-55 minutes, or until tests clean.

*Tip:

to peal the peaches, halve them, remove the pit and drop in boiling water for 2 minutes, no more than 3 minutes! The peel will just slip off.
