Apple Cranberry Turkey Salad Recipe

Serves:  4-6

Ingredients:
1 1/2 cups cooked or smoked turkey breast, diced
1 box plain couscous, cooked according to package directions
1/2 cup chopped pecans, toasted
2 apples, cored and diced
3 scallions, diced, including greens
1/2 cup raisins
1/2 cup mayonnaise
1 jar Stonewall Apple Cranberry Chutney
salt and pepper to taste
may substitute boneless chicken breast or roasted turkey.


Directions:
Combine turkey, couscous, pecans, apples, scallions and raisins.  Add chutney and mayonnaise. Mix well.  Season with salt and pepper to taste.  Serving suggestion: Makes an excellent filling for rollups or top your favorite salad greens.
