Chilled Strawberry Soup Sippers Recipe

Serves: 2 cups of soup

Ingredients:
3 cups organic strawberries, cleaned, hulled, sliced
2 tbsp sugar
3 tbsp white wine
1 cup french vanilla yogurt
2 tbsp Rothschild Hot Pepper Raspberry Preserves


Directions:

In a large bowl, combine the strawberries, sugar and white wine. Marinate for at least 1 hour up to 24 hours.

In a food processor, puree the strawberries, their liquid, yogurt and Hot Pepper Raspberry Preserves (may need to puree in batches). Strain through a sieve into a large bowl and chill in refrigerator for at least 30 minutes. To serve, pour soup in very small cups, espresso cups or shot glasses. Place on a platter to serve.
