Mixed Greens & Fresh Fruit Salad Recipe

Serves: 4 -6  
 
Ingredients:
2-3 cups mixed salad greens
1/2 cup fresh raspberries
1/2 cup fresh blueberries
1 (8 oz) can pineapple chunks, drained
2 large bananas, sliced
3 spring green onions, sliced
1 tbsp sunflower seed
2/3 cup raspberry vinaigrette *(see recipe below)


Directions:
In a small bowl, lightly toss together the raspberries, blueberries, drained pineapple chunks, sliced bananas, sliced onions, and sunflower seeds. Place the raspberry low-fat vinaigrette in a small serving bowl with a spoon. On individual salad plates, divide the salad greens equally. Top with spoonfuls of the fruit, onion, and sunflower mixture. Allow each person to drizzle their desired amount of raspberry dressing on the salad.



*Raspberry Vinaigrette

Makes 1 cup
 
Ingredients:
1/2 cup olive oil
1/3 cup red wine vinegar
1-2 tbsp Stonewall Raspberry Syrup
1-2 tbsp sugar
1 tbsp minced dried onions
1 tsp salt
1 tsp dried parsley
1 tsp onion powder
1/2 tsp garlic powder
1/4 tsp pepper


Directions:
Put all ingredients in a bottle with a tight fitting lid and shake well to combine. Tastes best if allowed to sit for a few hours or overnight (dried onions "marinate" and have a softer texture).
