Pumpkin Spice Cookies Recipe

Servings: 2 dozen cookies

Ingredients:
1 pkg Canterbury Becka's Pumpkin Cake Mix
2 tsp pumpkin pie spice or (1 tsp cinnamon, 1/2 tsp nutmeg and 1/2 tsp ginger)
1 cup canned pumpkin (not pumpkin pie mix)
1/4 cup butter, softened
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)
1 tub cream cheese frosting
cinnamon to sprinkle on top of frosted cookies

Directions:
Preheat oven to 375° (350° if using a dark cookie sheet). Lightly grease cookie sheet with shortening. In a bowl mix Becka's Pumpkin Cake Mix and pumpkin pie spice. Stir in canned pumpkin and butter until well blended. Stir in raisins and nuts if desired. Drop by tbsp about 2 inches apart on cookie sheet. Bake 11 to 13 minutes or until light brown around the edges. Cool completely and frost with cream cheese frosting and then sprinkle with cinnamon.
